Beef Brisket Flat Cut
Historically thought of as a cheap and tough cut, brisket has emerged as a darling of slow and low BBQ.
Brisket can be a monster. We trim ours down to just the tastiest parts (the point and the flat), to the same specs our friend Aaron Franklin uses for his brisket. We remove any excess trim and difficult to render fat pockets, and leave an even 1/8" – 1/4" of fat to ensure the brisket remains juicy through hours of hot, smokey purgatory.

Orders ship on Mondays, Tuesdays and Wednesdays. Once your order is ready you will receive a shipment confirmation. All orders ship via UPS 2-day (or less) transit time.
LOCAL PICK UP
Pick up hours are Monday-Thursday 8-5pm & Friday 8-3pm. You will receive a notice when your order is ready. If you're unable to pick your order up during our normal pickup times, please email us at firstname.lastname@example.org. We're happy to accommodate other pickup times. Note: If you are hoping to pick up meat for the weekend, please ensure your order is placed by 3 PM on Wednesday.
Your initial subscription order will ship within a week or less of your order date. Your subsequent subscription orders will ship following your selected delivery cadence. We turn to Creekstone Farms for a 100%-natural take on classic Black Angus corn-finished beef and Heritage Duroc Pork.
Small by midwestern meat processor standards, Creekstone's All-natural, Never, Ever program tracks each animal for its entire life, starting on the farm, to the quality of the finishing corn, to Creekstone's state-of-the-art Temple Grandin designed Humane Certified abattoir.
Creekstone selects each Black Angus by hand. The animals are pastured for most of their lives, and finished on high-quality corn. They are never given hormones or antibiotics.
Their natural Duroc Pork program is also all-natrual. No antibiotics or hormones, ever.
